Recipe: Lucky Collar Croissant Rolls

Southern traditions for the New Year are huge in many homes. One of them is preparing a meal that will bring prosperity, luck and financial gain.

Chef Jernard’s Lucky Collard croissant buns

  • 2 cans (8 oz) chilled croissants (8 units), divided into 16 dough triangles
  • 1 cup drained sautéed green cabbage
  • 1/4 cup diced red peppers
  • 1/4 cup diced onions
  • 1/2 stick of cream cheese
  • 1/4 cup grated cheddar cheese
  • 1/2 cup cooked diced turkey bacon
  • 1 teaspoon of chopped garlic
  • 1 teaspoon of kosher salt
  • 1 teaspoon of black crack pepper
  • Pinch of red pepper flakes

  1. Preheat the oven to 375.
  2. Bring the sauté pan to medium-high heat on the stove and add the olive oil to the sauté pan then add the collard greens, peppers, onions and minced garlic.
  3. Sauté for 5 minutes, then add the cooked turkey bacon.
  4. Sauté 1 more minute, then add all the cheese to incorporate into the dish.
  5. Once the cheese is melted, add salt and pepper and a pinch of red pepper flakes and sauté for 1 more minute.
  6. Remove from fire.
  7. Remove the croissants from the box and place each triangle flat on a baking sheet.
  8. Add 1 to 2 tablespoons of the green cabbage and cheese mixture to the croissants.
  9. Roll each square in the oven and bake for 10 minutes.
  10. Remove and serve with your favorite dip.
