Milagu sadam is a South Indian-style rice dish made from leftover cooked rice. The preparation consists of using leftover ice cream and sautéing them with onions, cashews, lentils and curry leaves. The essential flavor of rice is pepper and it is heavily seasoned with fresh ground pepper to give it a tangy and spicy flavor. The best part about this dish is that it’s ready in minutes!

How To Make Pepper Rice | Milagu Sadam

Sauté the mustard seeds, chana dal, urad dal and cook them until lightly brown. Add the curry leaves and the hinge and let them crackle for a few seconds. Add onion, cashews and sauté until lightly browned. Now add the cooked rice, pepper and salt and mix well.
