Chicken Kadhai | Homemade Chicken Recipe | Kadhai Masala


Kadhai chicken is one of the hallmarks of Indian cuisine. It is made in a special type of wok called Kadhai, hence the name Kadhai chicken. It can be served with rice or naan depending on your choice, making it a wholesome and wholesome meal. Good food ! Ingredients: Kadai Masala: 1 1/2 tsp. coriander seeds 3/4 tsp. cumin seeds 1/2 tsp. fennel seeds 1/2 tsp. Chilli powder 1.5 tsp coriander powder 1/2 tsp garam masala powder Other ingredients: 500 g chicken, bone-in curry 1 medium onion, finely chopped 2 tsp curry paste ginger garlic 1 cup tomato puree 1 medium onion, petals 1 medium bell pepper, cubed 2 tsp sour cream 1 tbsp Kasuri Methi, crushed Salt to taste 3 tbsp oil For the Kadhai Masala: Dry roast the whole spices over low heat for about 3-4 minutes. Cool and reduce to a coarse powder. For the sautéed vegetables: heat the oil in a frying pan, add the onion petals. Sauté over medium heat for one minute then add the pepper cut into cubes. Mix and continue to sauté another 2 min. Remove them to a plate and set them aside for later use. Method: Take a saucepan and heat the oil. Add the cumin seeds and let it crackle. Once done, add the chopped onions, sauté them for about 8-10 minutes over medium heat until light brown. Add the ginger garlic paste and sauté for 2 minutes over low heat. Now add the chicken pieces, sauté over high heat for 5 minutes. Add the turmeric, red chili powder, coriander powders and salt, mix well and fry for 2-3 minutes over medium heat until the spices are cooked and the oil separates. Add the tomato purée, mix well and cook over medium heat for 2-3 min. Now add the Kadai Masala which was made to the blender earlier, mix and cook for 2 minutes on low heat. Mix well and add water, cook for 10 minutes over low heat. Now add the crème fraîche and garam masala powder, stir and cook over low heat for 5 minutes until the oil separates. Add the sautéed onion and bell pepper, mix and cook over low heat for 2 minutes. Now sprinkle the Kasuri Methi, stir and cook over low heat for 2 minutes.
